  1. Gently toss cubed paneer with 1 tablespoon of chopped fresh coriander leaves. Set aside.
  2. In a pan, melt 20g butter over medium heat. Add chopped onion and sauté until translucent and lightly golden. Add ginger-garlic paste and cook for 1 minute.
  3. Pour in the tomato puree. Stir well and cook for 5-7 minutes until thickened and fat separates. Add red chili powder, turmeric powder, and garam masala. Mix well and cook for 2-3 minutes, stirring continuously. Add a splash of water if too dry.
  4. Add about 1/2 cup of water. Bring to a gentle simmer.
  5. Optional: For a smooth gravy, blend the mixture until completely smooth and strain back into the pan.
  6. Return pan to low heat. Add remaining 15g butter, Kasuri Methi (crushed), and salt to taste. If using, add sugar. Stir until butter is melted.
  7. Gently add coriander-tossed paneer cubes. Stir gently. Simmer for 2-3 minutes. Stir in fresh cream. Cook for 1 minute, ensuring gravy doesn't boil rapidly.
  8. Garnish with fresh coriander leaves. Serve hot.
